For Valentine’s Day treats for my friends this year, I tried my hand at making chocolates. I tempered the chocolate and poured it into a mold, then made a soft caramel filling. After taking the chocolates out of the mold, I drizzled them with ruby chocolate to give it a pink color. Ruby chocolate is a new, 4th type of chocolate that wasn’t developed until 2017; it was made available to the consumer in 2018. It has a bit of a sour raspberry taste without cocoa.
