My mom showed me a clip of Seinfeld recently, specifically the episode in which the characters are attempting to get babka from a bakery. I’m not a fan of Seinfeld, but my mom insisted on showing me after I told her I wanted to make babka. Maurizio at theperfectloaf.com posted a beautiful recipe for sourdough babka. Just recently having started my sourdough starter, I had to make it. I could not decide between chocolate or cinnamon, so I thought, why choose? And decided to do both! This was extremely fun to make. Similarly to making cinnamon rolls, you spread the filling then roll up the dough. Then, instead of cutting rounds, you cut vertically down the center and then twist into a beautiful, rope-like braid. Sourdough by nature takes many hours to rise and proof, but the results were well worth it. The hardest part was waiting for it to cool before eating it. But once I was able to eat it, YUM! It was beautifully flavorful and supple. I enjoyed this for days after, and even made french toast when it went stale. 10/10 recipe, would make again, maybe pumpkin spice flavored for the fall?
