I love watching Instagram baking reels, and have been eating up Ruby Hogal’s series where she bakes the top rated cakes in the world. My friend who is chronically not online wanted to bake something, so I showed her some of these videos to see what we should make. We settled on the Danish Brunsviger, a coffee cake that resembles a foccacia with a sugary, buttery, carmely top. I know you can’t really go wrong with loads of butter, sugar, and bread, but I did not expect this to be so good. It was more like a bread than a cake, which went beautifully with the goey topping. I’ve never had anything quite like this before, and I think I’d quite like to have it again.
