One of my favorite things to eat are taiyaki, which are Japanese fish-shaped waffles. They do not have fish in them but are just shaped like fish. There’s a shop in So Cal called Somi Somi that I love, that sells these filled with custard, red bean, Nutella, cheese, or ice cream (with toppings). There is always a long line out the door to get them, but once you taste them you disregard the previous frustration of waiting. Unfortunately, they don’t have anything like this in Salt Lake City, so I wanted to try to make them at home. There are a lot of taiyaki recipes on the internet; this one uses regular flour, but I bet they’d be better with rice flour (to get that chewy texture). I made some filled with ham and cheese, and some with berries, and ate these for either breakfast or lunch during the week. My friends were dumbfounded when they saw my lunch…
