Sometime in the fall, I decided to start eating vegetarian. I have a friend who is vegan that influenced me, and I am concerned that animals as food source is not environmentally sound. I don’t think I could become a full vegan, but first started eating vegetarian lunches. This is the first veggie stir fry that I made. It is important to get enough protein, so I made a marinated tofu for this, and added all the vegetables I found in my fridge. It turned out pretty tasty, and I brought it with rice for my school lunches that week. Vegetarians have to be careful about nutritional deficiencies so I make sure to take a multivitamin with vitamin B12 and iron. I sometimes have eaten fish (and have eaten the 3 B’s- brisket, bacon, beef jerky, all homemade), so my mom calls me a “flexitarian.”
